Chrysanthemums — Autumn's Most Underrated Flower

Ask a florist which flower gives the most for the money and the answer is usually the chrysanthemum. It comes in every colour a grower has thought to breed, it holds a shape without support, and it is still fresh three weeks after it arrives. At Floritta we hand-tie chrysanthemums in our London studio as the lead flower — a full white bouquet, a soft pink one with lavender accents — and as the backbone of mixed arrangements with roses, peonies and hydrangeas. Bloom, Spray and Santini

Three different flowers wear the same name, and knowing which you want makes ordering much easier. A bloom chrysanthemum is the single large head on one stem — architectural, slightly formal, the one used in Japanese arrangements and in tribute work. A spray chrysanthemum carries five or six smaller heads on branching stems and is what most people picture in a mixed bouquet. Santini are the small-headed sprays florists use for texture, in daisy shapes and in tight pompon buttons. We use all three, and we will tell you which is in a given bouquet if it matters to you.

In Britain the chrysanthemum is a warm, everyday flower: an autumn birthday bouquet, a housewarming, a thank you, a bunch that simply lasts. It is the flower for a gift that still has to look good when the recipient comes back from a week away, and the one florists reach for when a bouquet needs body and colour without a large budget. Three Weeks in a Vase

Chrysanthemums are among the longest-lasting cut flowers you can buy, and very little is needed to get there. Cut two centimetres off each stem at an angle, strip the lower leaves, and use cool water with the flower food sachet. Change the water every two or three days rather than topping it up — chrysanthemum stems cloud water faster than most. Keep them out of direct sun and away from the fruit bowl. Two to three weeks is normal, and closed buds will continue to open across the first week, so the bouquet looks different on day ten than it did on day one.
