How to recognise it

  • Cone-shaped central flower head surrounded by spiky, pointed bracts
  • Steel-blue to violet-blue colouring on both bracts and flower heads
  • Stiff, branching stems with a silvery-grey sheen
  • Spiny, thistle-like foliage near the base
  • No noticeable scent

Care

Strip any foliage that will sit below the waterline, as it decays quickly. Recut stems at an angle and place in clean water with flower food. Eryngium is not sensitive to ethylene and lasts well with minimal care. Keep away from direct heat and draughts.

Easy to confuse with

  • Echinops (globe thistle) – rounder, fully spherical flower head
  • Eryngium alpinum – more finely divided, feathery bracts
