How to recognise it

  • Tall upright spike with densely packed small four-petalled flowers along the stem
  • Rounded buds opening progressively from the base upward
  • Grey-green, soft, slightly fuzzy lanceolate leaves along the stem
  • Strong sweet clove-like fragrance
  • Firm, slightly hairy stem

Care

Strip any foliage that would sit below the waterline and recut stems at an angle before placing in fresh water. Matthiola drinks heavily, so check and top up water levels often. It is sensitive to ethylene, so keep away from fruit and ripening produce. Use clean buckets and change water every two days to avoid bacterial build-up.

Easy to confuse with

  • Hesperis matronalis (dame's rocket) – similar spike shape but looser flowers, less scent
  • Stock double vs single flowered varieties – differ in petal density on the spike
