How to recognise it

Dense upright flower spikes with tightly packed small four-petalled florets
Grey-green, slightly fleshy lance-shaped leaves along the stem
Sturdy, firm stem that snaps rather than bends
Strong clove-like fragrance
Buds opening progressively from base to tip of spike

Care

Strip any foliage that will sit below the waterline and recut stems on an angle before placing in fresh water. Use clean buckets and change water every couple of days as stems can foul it quickly. Keep away from direct heat and draughts; matthiola is sensitive to ethylene so keep it away from ripening fruit and old flowers.
