How to recognise it

  • Tall spike with densely packed four-petalled florets along the stem
  • Grey-green, slightly fuzzy lance-shaped leaves
  • Sturdy upright stem that can feel slightly woody at the base
  • Lower florets open first, buds at the tip
  • Distinct sweet, clove-like fragrance

Care

Strip any foliage that would sit below the waterline and recut the stems at an angle before placing in fresh water. Use flower food and change the water every 1–2 days as matthiola stems can rot quickly. Keep away from ripening fruit and other ethylene sources, and keep cool to extend life.

Easy to confuse with

  • Stock (Matthiola longipetala) – similar spikes but looser, more scented
  • Delphinium – taller spike but individual florets differ in shape
  • Larkspur – smaller florets, thinner stem
